Republique is a classy, buzzing French restaurant owned by chefs and restaurateurs Walter Manzke, his wife Margarita Manzke, and Bill Chait. The trio has created this polished French bistro that evokes their vision of a “bistronomie” as they aim to make French cuisine more accessible, and down to earth, bringing it back to its humble roots. This gorgeous, expansive space is trendy without feeling intimidating, although you’ll probably have to make a reservation weeks in advance as there’s always a bit of a queue here at all times.
Among the house specialties include Eggs on Toast (great as a brunch option), which includes some uni with the eggs, which adds a delightful, adventurous punch to the classic dish. The Heirloom Tomato Salad is stellar, reminiscent of a burrata that incorporates luscious cantaloupe and peach slices, cheese, and plump, fresh tomatoes. The Spotted Santa Barbara Shrimp is beautiful, succulent, and flavorful. It’s drizzled with a tangy sauce, a generous crumble of peanuts and the surprising combination of fresh corn. Another noteworthy dish is the Smoked Eel Beignets, accompanied by avocadoes and beets. For pastry lovers, a heaven awaits you as their pastry selections are divine, featuring authentic croissants, danishes, scones, crostatas, cookies, tarts, bombolinis, and cakes. Republique is a lovely place to enjoy great food in a beautiful ambiance and food that leaves a lasting impression.
